Scrub the potatoes and slice them into uniform sticks, approximately 0.5cm thick. In a large bowl, toss the fries with olive oil, dried rosemary, and garlic granules and salt until every surface is lightly coated. Using a bowl ensures even seasoning without making the fries soggy
Arrange the potatoes in the basket, try not to overcrowd them to ensure maximum airflow. Air fry for 18-24 minutes on 190c, giving the basket a vigorous shake halfway through
With 5 minutes left on the fries, add the kimchi to a pan over medium heat. Sauté for 2 minutes to cook off the raw edge. Stir in the soy sauce, sugar, and Gochujang. Cook for another 2 minutes until the sauce is glossy and coats the kimchi perfectly
Once the fries are golden-brown and fragrant, remove them and toss immediately with the hot, saucy kimchi
Plate the fries while steaming hot. Immediately top with grated cheddar so it melts into the kimchi, then garnish with sesame seeds and fresh spring onions for crunch.
