Season the chicken breasts generously with salt and pepper on both sides
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F)
Reduce heat to low. Add the butter and minced garlic to the skillet. Let the butter melt, constantly basting the chicken with the garlic butter for about 1-2 minutes until fragrant
Remove from heat, garnish with fresh parsley if desired, and serve immediately with the pan juices spooned over the top
